restaurants. According to what I am reading on Google, a 'Green' Restaurant is a restaurant that is environmentally friendly in its operations and its offerings are organic. What the Hubbs meant by 'Green' is, "Do our local restaurant buy their food and supplies locally"?
Why does he ask? Well, he wants to know if our local restaurants are supporting our local economy. In otherwords, "Locally Sustainable".
Great question.
His definition of local was 'within a 100-mile radius' of their location. The question came about as we were discussing our local economy and the the things that could be done to support it.
